Hokuyo Junmai Ginjo has a clear and light sweetness with a firm sharpness for the aftertaste. It uses Miyama Nishiki for the rice which is known to produce sake with good balance and a light, refreshing flavor.
Katsumi Sakamoto, the new toji (brew master), is an honest and enthusiastic toji who knows how to brew great sake in Toyama. As the man who holds the key to the reborn Hokuyo under the new system, he will surely live up to expectations. Sakamoto Toji's specialty is Junmai Ginjo.

ABOUT BREWERY
Uozu Sake Brewery Co., Ltd. (Uozu City, Toyama Prefecture)
株式会社魚津酒造(富山県魚津市)
- Founded in 1925
The local port of Uozu used to be the base of the northern sea fishing fleet, which was bustling with salmon and trout fleets. Since then, as the only brewery in Uozu City, Toyama Prefecture, we have continued to make sake that goes well with seafood, using the abundant subsoil water of the Tateyama foothills water system and Toyama Prefecture's first independently developed sake rice, Oyama Nishiki.
